SCOPE AND GENERAL PURPOSE
- Supervision and control of all F&B outlets in particular the ones assigned to
him/her. The consistent upkeep of set standards within agreed budgetary limits and
parameters of the law.

- May not make statements to the press
- May not change policy or procedures without
- F&B Managers approval
MAIN DUTIES
- Ensure prompt, efficient and friendly service in all outlets according to the
hotels standards
- Ensure the cleanliness and general appearance are up to the standards at all times, in
all outlets
- Ensure that all staff are dressed correctly and tidily
- Circulate throughout all outlets maintaining a high profile with our clients
- Ensure staffing levels are up to the required levels and within budget.
- Staff turnover must be limited to 25%
- To ensure room service orders are within the agreed time limits and are served in an
efficient and friendly manner
- Personally get to know clients and ensure their satisfaction and handle their complaints
- Ensure that reporting procedures are being adhered to
- Ensure that issuing and control of keys is handled efficiently and that staff are aware
of the importance of security
- Ensure maximum security in all F&B outlets i.e. locking away of stocks
- Take necessary steps in the event of theft, fire ,etc
- Relate to the outlet managers on a daily basis to resolve to even avoid arising problems
- Hold regular departmental meetings in his/her respective outlets in order to pass on
information, reinforce standards and listen to staff comments
- Monitor staff performance and hold appraisals in order to identify training needs and
potential for promotions
- Hold regular on the job training sessions in his/her respective department
- Appoint the most capable person for a vacant position bearing in mind that internal
transfers or promotions are beneficial to the company and an excellent staff motivator
- Fairly and constructively discipline hand in hand with the outlet manager
- Ensure the profitability of the F&B operations in particular his assigned department
- Ensure the regular taking of operating stock including linen
- Collect and prepare information required for budgeting purposes
- Submit reports and projects within the agreed deadlines as well as follow up
administrative work timeous and efficiently
- Observe trends and new ideas in the market place in order to move with the changing
requirements of our clientele
- Attend meetings as requested
Portfolio Management
- Each F&B Assistant Manager is given a portfolio of outlets for which he takes
specific responsibility i.e.:
- Staff training and development
- Maintenance of standards as agreed in SOP manual
- Updating SOP manual as and when necessary
- Maintaining cordial relations with personnel
- Guiding and supporting department head wherever possible
- Achievements of financial targets
- Assisting in promoting the outlet with promotions with the PRO.
