Scope and General Purpose
- Responsible for in the absence of, or under
the supervision of other management, to oversee the constant adherence to
basic service standards and guest satisfaction at all times. Ensuring that
both the required profitability and standards are achieved.

Liases with
Limits of Authority
- May assist in the recruitment of FOH staff
liasing with the store Training Manager or Assistant General Manager.
- Organise the FOH staff in the restaurant as
prescribed by basic standard of conduct and operation of the Restaurant
Group.
- May discipline staff as long as the parameters
as set by the Company and Labour Act are adhered too and communicated to the
Assistant General Manager or General Manager.
- May not make policy or operational changes.
- May not make statements to the press or
public.
Main Duties
- Directly supervise and co-ordinate the
activities of waitrons, runners, hostesses and cleaners including the
production and management of rosters.
- To manage the process of accurate reservations
and their subsequent allocation and satisfaction.
- To deal with guest complaints in an
appropriate and satisfactory manner, communicating it to the Assistant
General Manager.
- Ensure that the restaurant area is always kept
to the required standard of appearance as dictated by the Restaurant Group,
in accordance with company policies and municipal codes and by-laws.
- To assist, encourage and support all FOH staff
in the daily execution of their duties.
- Ensure that all guest orders are taken and
processed in a speedy and efficient manner.
- Strictly observe all safety and hygiene
practises as laid out by the Company and statutory authorities.
- Accept additional duties and responsibilities
as required to effect the smooth running of the FOH and may include, where
appropriate:
- Supervision of functions.
- Engage extra/part time staff.
- Work a station.
- Guest liaison.
- To closely assist the Bar Manager in all
aspects regarding the control and management of Bar related functions.
- Advise management of possible
improvements to all aspects concerning the restaurant, including
service staff conditions and sales.
- Take other reasonable duties as dictated
by senior management.
- To promote and ensure the well being of the
restaurant in all the aspects of your job function.
Performance Measurement
- Complete and neat recording of all control
forms required and checked by the General Manager.
- Zero tolerance on guest complaints.
- All categories as indicated in the incentive
scheme (where applicable).
- Adherence too and promotion of minimum ticket
averages, driving sales.
- Ensuring that the correct GP%, as prescribed
by the GM, is adhered to in the bar.
